Advertisement, worded thus-- "Igleheart Brothers, Incorporated Established 1856 Millers of Famous Swans Down Cake Flour for Finer Cakes Evansville, Indiana A Product of General Foods" The Igleheart brothers--Levi, William T., and Asa, according to the 1882 city directory) built their mill in 1856 at 418 Locust St. In 1904 they moved to a new site, and in 1909, the original location was razed. The new location was at 1600-14 N. First Ave., formerly 2214 First Ave. This new location was destroyed by fire September 16, 1909 but was rebuilt. The company was bought out by General Mills in 1926, and by 1993, the Igleheart division closed. Most of these buildings have also been razed, but the silos still stand. In 1894, "Addison [son of founder, William] discovered a new way of milling wheat that made a flour ideal for cake baking. He named it Swans Down because it was so light and soft. [In 1898] Ladies� Home Journal featured the first advertisements for Swans Down. Swans Down won the grand prize for cake flour at the [1904] World�s Fair.".By the early 1970s, marketing by other competitors forced Swans Down Cake Mix out of business, but Swans Down Cake Flour survived because of the loyal generations of scratch bakers who refused to bake with anything else.
